Last Sip of Summer at Mellow Mushroom

There’s a subtle shift that happens right around now. The daylight fades just a little sooner, and the evening breeze carries that unmistakable first hint of late-summer cool. While autumn and its cozy, spiced flavors are waiting just around the corner, summer isn’t done with us yet. Before we trade in our patio seats, there’s still plenty of summer left for us to enjoy the bright, refreshing brews that make this time of year so special.

Every Thursday it is Steal The Pint Night at Mellow Mushroom.

Here at Mellow Mushroom, we’ve always believed great food deserves an equally thoughtful pour. That’s why we’ve put together a lineup of fruit-forward beers that brings out the absolute best of the season. Whether you’re a longtime craft beer lover with a trained palate or simply looking for something crisp, vibrant, and easy-drinking to go with your pizza, these drafts are built to deliver.

Brewers treat fruit additions like an art form. They’re carefully selecting whole fruit, purées, or concentrates, and timing the addition precisely to shape the final character. Adding fruit during the boil creates a subtle, gently-cooked depth, while introducing it during primary fermentation yields a more complex, dry profile as the yeast eats through the natural sugars. For those bright, fresh-off-the-vine aromatics, brewers often add fruit after fermentation is complete, a technique known as “dry-fruiting.” The underlying beer style is just as crucial, providing the canvas for the fruit to either blend seamlessly or take center stage.

Hailing from Louisville, Atrium Brewing has established itself as one of Kentucky’s most innovative flavor houses, particularly when it comes to fruit-forward sours. Their Dawg’ Gone is a standout example of the smoothie/pastry sour style. Offering a thick, jammy fruit profile balanced by a vibrant tartness, it delivers a rich, dessert-like experience without losing its thirst-quenching kick. Sour beers have surged in popularity for their complex flavor dynamics, often relying on targeted fermentation techniques and heavy fruit purée additions to build harmony between bright sweetness and lip-smacking acidity making Dawg’ Gone a perfect bridge between summer’s bold fruitiness and fall’s richer palates.

Heading north to Grand Rapids, Michigan, Founders Brewing Co. brings us a classic crowd-pleaser with Rübæus (Nitro). Brewed with real raspberries introduced at multiple stages of fermentation, Rübæus delivers an authentic, berry-forward tartness balanced by a subtle malt sweetness. What sets this version apart is the nitrogen tap presentation: serving it on nitro cascading bubbles infuses the ale with a luxurious, velvety head and a remarkably silky mouthfeel. It’s an approachable, dessert-adjacent brew where sweet berry top notes seamlessly blend with a smooth, rounded finish.

To round out the trip, Rhinegeist Brewery in Cincinnati gives us a brilliantly effervescent option in Mango Bubbles. Built on a crisp, light-bodied base, this fruit beer is packed with bright mango character and punchy tropical aromatics. Brewers crafting fruit-forward ale hybrids like Mango Bubbles often incorporate fruit during or after conditioning to preserve those delicate, volatile aromas. The result is a vibrant, sparkling ale with a clean, dry finish that practically begs to be enjoyed alongside a fresh slice on the patio.

These three beers represent just a glimpse into the diverse and exciting world of fruity beers available on our current tap list. Each brewery brings its unique approach to crafting these flavorful brews, utilizing different techniques and fruit combinations to create distinct and memorable drinking experiences.

So, before the season officially turns, take a moment to drop by your local Mellow Mushroom and raise a glass. It’s the perfect way to savor the last lingering rays of summer and toast to the good flavors ahead. Cheers!
